Keto Lemon Bars

This light, bright, and zesty treat can be enjoyed as a dessert, midday snack, or even breakfast!
  • 2 Dessert Cauliflower Keto Crusts
  • 1/2 block cream cheese, softened
  • Fresh Lemon juice from 1/2 lemon
  • Lemon Zest from 1/2 lemon
  • Sweetener of choice to taste (we used monk fruit sweetener)
  • 1 Tsp vanilla extract
  1. Crumble thawed crusts into fine pieces or use a food processor
  2. Mix crust crumbles with cream cheese, lemon juice, sweetener, and vanilla
  3. Press your mixture into a parchment-lined container and freeze until solid
  4. Cut into pieces and top with whipped cream and lemon zest
  5. Store in fridge and serve cold
