This light, bright, and zesty treat can be enjoyed as a dessert, midday snack, or even breakfast!
- 2 Dessert Cauliflower Keto Crusts
- 1/2 block cream cheese, softened
- Fresh Lemon juice from 1/2 lemon
- Lemon Zest from 1/2 lemon
- Sweetener of choice to taste (we used monk fruit sweetener)
- 1 Tsp vanilla extract
- Crumble thawed crusts into fine pieces or use a food processor
- Mix crust crumbles with cream cheese, lemon juice, sweetener, and vanilla
- Press your mixture into a parchment-lined container and freeze until solid
- Cut into pieces and top with whipped cream and lemon zest
- Store in fridge and serve cold
