Every now and then, it’s nice to tuck in for a long night of being creative in the kitchen. This recipe would make the perfect addition to an at-home 3-course dinner. You can probably find herbed ricotta at your local grocery, but with ample time it might be more enjoyable to customize your own herb medley and do it yourself. Italian food is a very forgiving place to start for a budding chef anyway.
To make: While you let your Italian Spinach Crust thaw, heat a drizzle of oil in a nonstick pan. Once the crust is thawed, cook your crust on both sides until desired crispness (2-3 minutes). Let your crust cool for a few minutes then top with cheddar, pepperoni, sliced red onion, and herbed ricotta. Broil the topped crust for a few minutes until toppings are melted.
Tip: If you can't find herbed ricotta, make your own by adding Italian herbs to plain ricotta.
