Chicken Salad Wrap on Kale Crust

With any nutritional lifestyle change, there’s always a bit of a social sacrifice. Chicken salad is a classic wedding shower/baby shower dish, but it’s usually sandwiched between two slices of carb-loaded white bread. With a simple substitution, Kbosh’s interpretation will make sure you stay the life of the party.

To make: Mix unsweetened, dried cranberries, chopped celery, red onion, crushed walnuts, two cans of chicken, mayo, apple cider vinegar, and celery seed. Bake a Kale Crust as instructed and let cool. Once cooled, top crust with chicken salad mixture.

Tip: Try boiling the dried cranberries with some erythritol and whole earth sweet drops till plump and juicy!
